Healthy recipe: Zucchini with raisins and rice

Do you get a lot of exercise?? And should you consider this with food too? Every now and then an easy and quick recipe is not bad at all, like this zucchini with raisins and rice. It is a light meal so the food is not so heavy on the stomach, during exercise.

And are also healthy.

The recipe

main dish- 4 people- 30 minutes + 30 minutes in the oven.

What you need:

  • 1 chicken bouillon tablet
  • 2 zucchinis
  • 1 onion
  • 500 gr tomatoes
  • 200 gr ham
  • 3 tablespoons of olive oil
  • 1 teaspoon of cinnamon
  • 300 g brown rice
  • 50 gr raisins
  • 100 gr grated cheese.
  • Rectangular baking dish, greased

How to make it:

In a saucepan bring 1/2 liter of water to a boil, crumble the stock cube above it and dissolve the stock in the water while stirring.

Place the zucchini on a board and cut in half lengthwise. Hollow out the zucchini with a spoon to within 1/2 inch of the wall. Finely chop the flesh of the zucchini.

Peel and chop the onion. Chop the tomatoes and cut the slices of ham into pieces.

Heat the olive oil in a frying pan and gently fry the onion and zucchini pieces, stirring, for 2-3 minutes until glazy.

Sprinkle the cinnamon on top and add the rice while stirring. Fry everything for 1 minute and then add the diced tomatoes and raisins. Cook for another 2-3 minutes until the tomato pieces soften.

Pour in 400 ml of broth and bring to the boil while stirring. Cook the rice for 8 minutes. Preheat the oven to 200C.

Pour the rest of the broth on the bottom of the baking dish and place the zucchini next to each other in the dish.

Stir the ham and half the cheese into the rice and fill the zucchini with the rice mixture. The rice may already have a mound protruding above the zucchini.

Sprinkle the cheese over the zucchini and slide the dish onto the rack in the center of the oven. Bake the stuffed zucchini in 30 minutes until done.
